Our story starts with an educational trip to Naples, Italy, where we discovered how Pizza is cooked and eaten the RIGHT way!
There, our chefs learned through first hand experience how to create not only delicious Pizza and Street Food, but how to present these dishes in a way that preserves the taste, ensures the optimal temperature and also allows one-handed consumption (or in our case; devouring!) without making a mess.
This way of eating is perfect for events where guests are able to move freely and socialise.
In Naples, the social aspect of enjoying food with friends and family is very important, second only to taste, and we agree!
Our chefs learned that traditional pizza dough is prepared quite simply – using the highest quality “00” flour and olive oil, combined with yeast, water and salt. But the secret to best Pizza dough in world? Patience! Authentic Italian Sour Dough needs to rest for at least 6 to 8 hours to ensure it is adequately crusty, yet fluffy with the right amount of texture and taste.
Luckily, we believe that preparation is key, so you never have to wait THAT long to taste the delicious flavours of Benny Blancos’ authentic Italian Pizza.
After learning about preparation and taste, we learned about presentation. The traditional way of serving pizza is in a “Portafoglio Style”.
This means once your pizza is cooked to perfection, it is folded in half and then in half again and served in greaseproof paper.
“Why not just serve it in a box?”, we hear you say. It is after all the way we as Britons know and love to eat our Pizza? Here are our reasons:

At Benny Blancos, we take authenticity very seriously.
Our Tomato and Basil sauce, which is used in the majority of our dishes, is lovingly made form scratch – and not just any old tomato will do.
We use only San Marzanos Tomatoes, which are sweet Italian plum tomatoes from Campania.
Famous for being sweet, pulpy, low in acidity, and containing few seeds, they are extraordinarily good for making sauces.
These long, meaty tomatoes are structurally distinct from most other plum tomatoes, containing only two seed pockets instead of the typical five.
The tomatoes are so revered in Italy that to make true Neapolitan Pizza, according to the Associazione Verace Pizza Napoletana, you must use San Marzano tomatoes.
Anything else just will not do. And we agree!
